Synopsis: From the Jacket: It's fun, it's easy, it's inexpensive, and there are none of the preservatives, excessive fats, and fillers that come with commercial sausages today. Here is the complete book for sausage lovers everywhere, with everything the beginner needs to get started and plenty of challenge for the experienced cook.

"Sausages exist in nearly all national cuisines and there are enough different kinds to please everybody, from peasant-style aromatic blends to delicately spiced and prepared varieties," say the authors. You'll find mouthwatering recipes for spicy Italian sausage, delicate French saucisson, hearty German wursts, sausages from the Orient, Latin America, the Caribbean, Scandinavia, and many more. There is even a recipe for the all-American hotdog!

Of special interest is a guide to purchasing meat and casings, with instructions for storing, drying, and smoking the finished product (including how to make a home smoker). In addition there are special recipe sections on using sausage in Appetizers; Soups; Breads, Stuffings, and Pizzas; Side Dishes; Main Dishes; and Desserts. A comprehensive Glossary that describes over 100 different kinds of sausage completes the coverage of the subject.

PAMELA RIDDLE and MARY JANE DANLEY grew up together in a large Czechoslovakian household where they learned to cook at their grandmother's knee. By the time they reached adolescence they were avid cooks, watching Julia Child' televised cooking lessons and experimenting with beef Wellington. It was only natural that sausagemaking would follow in time.

Pamela is a book editor in New York, specializing in arts and crafts and cookbook Her sister Mary Jane conducts cooking lessons in her home and also teaches needlepoint and patchwork. She lives on Long Island with her husband John and their two sons.
